Thai Red Vegetable on Rice ❤

Our award-winning Soulful Thai Red Vegetable Curry, fragrant & satisfying, with roast aubergine, baby corn, sweet potato & red pepper, served on brown basmati rice & lentils with a squeeze of lime.

WHAT YOU GET:

1.5kg pouch of Soulful Thai Red Vegetable Curry, 375g of uncooked brown basmati rice/green lentil mix, 1 lime. (See below for full ingredients & nutritional information.)

WHAT YOU DO:

1. Pour the rice & lentils into a saucepan along with 450ml water. Bring to the boil, then reduce the heat and simmer with a lid on for 10 mins. Remove from the heat. The rice & lentils will continue to cook in their own steam while you now heat the curry.

2. Pour the pouch of Thai Red Curry into a large saucepan, cover the pan with a lid and heat (medium heat) for 10 mins, until it is piping hot.

3. Fluff up the rice & lentils gently with a fork and serve, adding curry on top and a wedge of lime on the side.

 

❤ Spaghetti & Meatless Balls ❤

Spaghetti & meat-free meatballs (soya protein) in a chunky rustic Soulful tomato & basil sauce, topped with grated vegan cheese. Mamma Mia! 

WHAT YOU GET:

1.5kg pouch of meatless meatballs in sauce, 375g of uncooked spaghetti, 60g grated mozzarella-style vegan cheese. (See below for full ingredients & nutritional information.)

WHAT YOU DO:

1. Add your spaghetti to a pan of boiling water and simmer.

2. At the same time, pour the sauce & balls into a wide based saucepan, pop on a lid and heat gently (medium heat). Stir occasionally till piping hot.

3. After 11 mins, the spaghetti should be 'al dente' (not too soft!). Drain in a colander and add straight to the sauce & balls.

4. Toss everything together and plate up, adding a sprinkle of grated vegan cheese.

 

❤ Keralan Curry ❤

A gorgeously creamy vegetable and coconut curry with green beans, cauliflower & sweet potato, served on a bed of brown basmati rice & green lentils, with a side of tenderstem broccoli.

WHAT YOU GET:

1.5kg pouch of Soulful Keralan Curry, 375g of uncooked brown basmati rice/green lentil mix, 500g of tenderstem broccoli. (See below for full ingredients & nutritional information.)

WHAT YOU DO:

1. Pour the rice & lentils into a saucepan along with 450ml water. Bring to the boil, then reduce the heat and simmer with a lid on for 10 mins. Remove from the heat. The rice & lentils will continue to cook in their own steam while you now heat the curry.

2. Pour the pouch of Keralan Curry into a large saucepan, cover the pan with a lid and heat (medium heat) for 10 mins, until it is piping hot.

3. Five minutes before the curry is ready, add the tenderstem broccoli to a pan of boiling water, simmering for 3-5 mins. Once tender, drain.

4. Fluff up the rice & lentils gently with a fork and serve, adding curry on top and tenderstem broccoli on the side.
