❤ Vegan Mushroom Stroganoff with Tenderstem Broccoli 

A medley of chestnut mushrooms, chunky veg & red rice in a creamy sauce with smoky paprika, served with whole tenderstem broccoli.

WHAT YOU GET:

1.5kg pouch of Soulful Mushroom Stroganoff, 500g tenderstem broccoli. (See below for full ingredients & nutritional information.)

WHAT YOU DO:

1. Pour the pouch of Mushroom Stroganoff into a large saucepan, pop on a lid and heat over a medium heat for 10 mins until it is piping hot. Stir occasionally.

2. Halfway through heating the Stroganoff, add the tenderstem broccoli to a pan of boiling water and simmer for 3-5 mins. Once tender, drain.

3. Serve your Mushroom Stroganoff with tenderstem broccoli on the side.

 

❤ Mexican Bean Chilli & Sweet Potato Wedges (GF) ❤

Our award-winning Mexican Chilli, a rich & warming bean fiesta of a stew with sweet red pepper, quinoa, tomatoes & lentils, served with roasted sweet potato wedges & grated vegan cheese.

WHAT YOU GET:

1.5kg pouch of Soulful Mexican Bean Chilli, 1kg (approx) whole sweet potatoes, 60g mozzarella-style vegan cheese. (See below for full ingredients & nutritional information.)

WHAT YOU DO:

1. Preheat your oven to 220ºc/200ºc Fan/Gas Mark 7.

2. Wash the sweet potatoes in cold water, and chop into wedges the size of a big chunky chip (no need to peel!). 

3. Spread them out on a baking tray, drizzle over some oil and season with salt & black pepper. Toss to coat evenly.

4. Roast them on the top shelf of your oven for 30 mins, until soft on the inside and crispy on the outside. Turn halfway through cooking.

5. 10 mins before the wedges are ready, pour the pouch of Mexican Bean Chilli into a large saucepan. Cover with a lid and heat (medium heat) for 10 mins until the chilli is piping hot. Stir occasionally.

6. Serve your wedges and bean chilli with a sprinkling of vegan cheese.

 

❤ Goan Curry ❤

This rich, heart-warming curry with sweet butternut squash, cauliflower & peas is bursting with wonderful flavours from Goa on the south-west coast of India.

WHAT YOU GET:

1.5kg pouch of Soulful Goan Curry, 375g of uncooked brown basmati rice/green lentil mix. (See below for full ingredients & nutritional information.)

WHAT YOU DO:

1. Pour the rice & lentils into a saucepan along with 450ml water. Bring to the boil, then reduce the heat and simmer with a lid on for 10 mins. Remove from the heat. The rice & lentils will continue to cook in their own steam while you now heat the curry.

2. Pour the pouch of Goan Curry into a large saucepan, cover the pan with a lid and heat (medium heat) for 10 mins, until it is piping hot.

3. Fluff up the rice & lentils gently with a fork and serve with curry on top.
